మామిడి అల్లం నిల్వ పచ్చడి తయారీ | Mamidi Allam Pachadi in telugu | Mango Ginger Pickle


Ingredients
Mango ginger or mamidi allam - 125 grams ( 1cup )
Tamarind - 125 grams
Jaggery - 125 grams ( 1cup )
Fenugreek & mustard seeds powder - 1tsp
Red chilli powder - 3/4 th cup to 1 cup ( Red chili - 125grams )
Garlic - 3nos
Oil - 4tbsp
Mustard seeds - 1tsp
Jeera - 1tsp
Urad dal - 1tsp
Chana dal - 1tsp
Curry leaves
Red chilli - 6nos
Asafoetida powder - 1/2 tsp
Turmeric powder - 1tsp
Garlic pods - 6nos

Preparation
Wash, peel the skin of mamidi allam & cut it into small pieces
Add tamarind in bowl, wash it once, add 250 ml of water & cook it up to smooth pulp
Add turmeric powder while cooking the tamarind
Once tamarind is cooked & cool it completely
Take a pan, add 1tbsp of oil,
add mamidi allam, saute it till it goes raw smell & after 5- 10 mins remove from the pan
In same pan, add mustard seeds, jeera, urad dal, chana dal, dry red chilli, curry leaves, garlic pods- 6nos, asafoetida powder & saute well
Once sauted tadka & cool it completely
Boil 1glass of water
Grind mamidi allam & garlic sepertaely
Add tamarind pulp, jaggery in mixer & grind it smooth paste
Add grinded mamidi allam, red chilli powder & grind it smooth paste
Add some amount of hot water while grinding the pickle
Add garlic, salt, fenugreek & mustard seeds powder in mixer
Mix it once, add some amount hot water & grind it smooth paste
Add tadka to grinded pickle & mix well
Mamidi allam or mango ginger pickle is ready & stored in air tight container up to 6months to 1year
This pickle is served in idly, dosa, rice & moong dal
