You wouldn’t believe what this lasagna is made from! Guilt free and Delicious

Zucchini Lasagna : serves 6-8 people

Ingredients:
-Beef sauce :
1 kg beef mince
1 large onion
6 cloves of garlic
1 Tbsp sweet paprika
1 Tbsp oregano
1 Tbsp salt
pepper
400ml of passata

-Cheese mixture:
500g ricotta
1 egg
125 parmesan cheese
125g mozzarella cheese

-4 zucchinis sliced or shaved
-basil and parsley

Step by step:
chop onion , garlic , parsley and basil
slice 4 zucchinis
-saute onion and garlic
-add mince
-add salt, paprika, and oregano
-stir well then add pasatta.
-cook for another 15 minutes
-Set aside
-in a bowl combine ricotta, mozzarella, an egg and parmesan cheese.
-In a tray add a layer of mince sauce, then zucchini, sauce, cheese mixture, herbs ( basil and parsley )
-repeat the steps of layering
-finish with a cheese sprinkled trough the top
Bake for 30 minutes on 180c
-Rest for 20 minutes
