Cinnamon Bums That Are Good For Your Buns

Ingredients: Buns
2 cups of gluten free oats
1/2 cup unsweetened nondairy milk
2 large RIPE bananas
8 Deglet Noor dates, pitted
2 Tablespoons aluminum and sodium free baking powder
2 Tablespoons apple cider vinegar
1 Tablespoon cinnamon
1/2 cup raisins or currants (optional)
1 teaspoon vanilla powder (optional but good)

Preparation:
Preheat oven to 350 degrees F.
Place all ingredients, except for raisins in a high-powered blender and blend until smooth. Stir in raisins, if using. Fill a 12 cup silicone muffin pan and distribute the batter evenly. Bake for 30 minutes. Remove from oven and cool completely before removing from the muffin pan.

Ingredients: Frosting
2 cups roasted Hannah yam flesh, cooled and peeled
1/4 cup date syrup* or date paste**
¼ cup unsweetened nondairy milk
1 teaspoon vanilla powder (optional but recommended)

Preparation:
Place all ingredients in a food processor fitted with the “S” blade and process until smooth and creamy. Generously frost the cooled muffins. This makes enough frosting for at least 2 batches of muffins.

Chef’s Note: Hannah yams are also called White Sweet Potatoes or Jersey Yams..I do not recommend the orange ones.

Due to the sticky nature of this batter it is essential that you only use a nonstick silicone muffin pan instead of cupcake liners or you will not be able to get the papers off to eat them.
