Mix vegetable pakora

Ingredients:
1. Besan (gram flour) 2 cups
2. Salt
3. Ajwain seeds
4. Baking soda
5. Lemon juice
6. Ginger-chilli paste
7. Onion sliced
8. Potato, peeled and thinly sliced
9. Cauliflower florets
10. Chilli
11. Tomato slices
12. Capsicum diced
13. Banana slices
14. Water
15. Oil for deep frying

Instructions:
Prepare the Vegetables:

Cut the potato, tomato, onion and banana into thin slices. Cut cauliflower into small florets. Dice capsicum.

Make the Batter:

In a large mixing bowl, combine besan (gram flour), ajwain seeds, ginger-chilli paste and salt.

Gradually add water, little by little, and whisk to form a smooth batter. The consistency should be thick enough to coat the vegetables well.

At last add a pinch of baking soda and lemon juice to activate it.Mix it nicely.

Mix Vegetables with Batter:

Add the vegetables to the batter one by one. Coat it well with the batter.

Fry the Pakoras:

Heat oil in a deep frying pan or kadhai over medium heat.

Once the oil is hot, drop spoonfuls of the vegetable batter into the oil. Fry turn by turn all the vegetable pakora, making sure not to overcrowd the pan.

Fry until the pakoras are golden brown and crisp on all sides, turning occasionally. It will take about 4-5 minutes per batch.

Drain and Serve:

Remove the pakoras using a slotted spoon and drain excess oil on paper towels.

Serve hot with mint chutney, tamarind chutney, or ketchup.

Tips:

Make sure the oil is adequately hot before frying the pakoras to ensure they cook evenly and become crispy.

You can adjust the spices and green chilies according to your taste preferences.
