This is the second in my series about cutting down on carbs. The recipe is designed to be served as a side dish with meat or fish, but can easily be transformed into a low carbohydrate meal for two.

Aubergines are interesting. Never eaten raw, they are however often served in a semi-raw state in restaurants. Some chefs know that a quick flash under the grill or a few minutes on the hob will produce attractive char-grilled lines. What is missing is flavour and this is where my aubergine treat comes in: an easy way to bring out the best of this vegetable.
