The Kamado Joe Jr. might be the PERFECT smoker for cooking a single pork butt! This grill will handle a 10 pound butt without any issues. In this video, I cooked an 8.5 pounder to perfection with no issues of any kind. I even went old-school and didn't use any electronics to get the job done :)

The Joe Jr. held perfect temperature control on this cook. I ran the grill for 8+ hours at 300°F on a single load of charcoal. The grill would have run significantly longer at 225-250°F on the same amount of coal.

Whether you are cooking on the Kamado Joe Jr. or any other smoker, the same cooking methods apply for making a perfect pork butt:

1. Cook it until the bark is set firmly
2. Wrap in foil (optional) to continue cooking until tender
3. "Probe Tender" feels like sticking a bamboo skewer into a new jar of peanut butter. When the meat has that little resistance, it's cooked perfectly!
