Today we make the Missionary's Downfall, a frozen blended drink from the 1930s. This Don the Beachcomber Drinks was one of the first to use the blender. Fred Osius and Fred Warning introduced the first commercial blender just the year before we saw the first reference to DtB using a blender for this minty and refreshing pineapple and rum cocktail.

3 pieces of pineapple
8 mint leaves

½ oz acid-adjusted pineapple juice or lime juice (15 ml)
½ oz honey syrup (15 ml)
½ oz peach liqueur (15 ml)
½ oz RinQuinQuin Peach Aperitif (15 ml)
1 oz Probita Rum (30 ml)
60 grams chopped pineapple chunks
12-13 fresh mint leaves
170 grams crushed ice
¼ teaspoon Xanthan gum

Acid-adjusted pineapple juice
100 ml pineapple juice
3.2 grams citric
2 grams malic acid
