After the success of the "ribs"; I knew I had to try making vegan chicken, and my goodness am I glad I did! It's succulent and tender, and packed pull of delicious flavours.

The key flavourings are dried celery and lemon, which really give it a fresh "chicken" taste, but don't worry if you can't be bothered drying your own; both are available on eBay (just be sure to check it's powdered celery rather than seeds as they taste very different).

I also went with strong brown bread flour as I wanted to see if there was any difference in taste to white bread flour. There wasn't really, but the bran definitely brings an extra texture that's really nice. It does get stuck in your teeth a bit, so feel free to sieve the bran out first.

I reused the bones that I carved for the ribs, but you could do these as fillets/breasts, or even as one loaf and then cut into slices for Deli meat.

WtF Chicken Drumsticks

Seitan Ingredients:
1.5kg (3.3lb) Strong Brown Bread Flour
800ml (3 cups + ¼ cup + 1 tbl) Water
½ tsp Celery Salt
½ tsp Celery Powder
1 tsp Onion Powder
½ tsp Garlic Powder
½ tsp MSG
¼ tsp White Pepper
½ tsp Dried Lemon
2 tbl Chicken Flavour Stock

Glaze Ingredients:
1 tsp Chicken Flavour Stock
4 tbl Boiling Water
¼ tsp Maggi Seasoning
½ tsp Soy Sauce
⅛ tsp Liquid Smoke
1 tbl Malt Extract
2 tbl Spawn (starch run off)

I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
