Condor offers models of their aircraft for purchase onboard their flights. The color of the livery on offer depends on what they have in stock, in this case the "Sea" livery was the only 757-300 model they had on offer on my flight from YYZ to FRA.
These models are only available for purchase through Condor's buy-on-board service or through their website but the website only ships to Germany so these models are hard to find.
I took advantage of a deal they had where you get a discount when you buy two models at once and also bought the "Island" A330-900 that you can see in the last portion of the video.
