BOBA RECIPE:
1/4 tsp pumpkin pie spice
2 Tbsp pumpkin puree
1 Tbsp brown sugar
1 + 4-5 Tbsp tapioca starch
food coloring (brown, red, yellow)
floss or string

In a microwave safe bowl, add pumpkin pie spice, pumpkin puree, and brown sugar. Mix it together and microwave for 10-15 seconds. Add 1 Tbsp tapioca starch and stir in. Microwave another 10-15 seconds. Stir, the mixture should be very sticky. If not sticky, microwave another 10 seconds, until a sticky consistency is achieved. Add the rest of your tapioca starch and fold in. Pour onto a work surface and knead until smooth. If sticky, add more tapioca starch.
Once smooth, separate into sections. Add food coloring and knead in. To prevent dough from drying out, cover in plastic wrap. See video on shaping pumpkins.
Coat in tapioca starch to prevent sticking, and shake off excess before cooking.
Bring a pot to a boil, add in your boba. Stir until they float. Once floating, lower heat to low, cover and let cook for 10 minutes. Remove from heat (still covered) and let sit another 10 minutes. Check your boba, if they look like they have large cores in the middle, let them sit in the hot water longer. Drain and rinse boba in cold water to stop the cooking process. Add honey or other sweetener to boba pearls. (optional)
