PESTO GNOCCHI 🌱🥔

WHAT YOU NEED:⁣
(PESTO SAUCE)⁣
2 cups spinach⁣
1/4 cup basil (optional)⁣
1/4 cup sliced almonds⁣
1 tbsp lemon juice⁣
1 tbsp minced garlic⁣
1 tsp salt⁣
½ cup olive oil⁣
½ cup grated parmesan⁣
2 cups cottage cheese⁣
⁣
(GNOCCHI)⁣
1 pack store bought gnocchi⁣
Olive oil, to pan fry⁣
⁣
WHAT TO DO:⁣
1-Add all pesto ingredients except for the cottage cheese to a food processor or blender. Pulse until spinach is in small pieces, stopping to scrape down the sides as needed.⁣
2-Add the cottage cheese and blend on high until no chunks remain. Set aside.⁣⁣
3-In a large pan over medium heat, drizzle olive oil then cook gnocchi until both sides are just crisp.⁣
4-Stir in pesto to coat.⁣ Top with optional extra parmesan or basil and enjoy!

STRAWBERRY GLAZE SMOOTHIE 🍓💫

WHAT YOU NEED:⁣⁣⁣
(SMOOTHIE BASE)⁣
2 cups frozen strawberries⁣
1 banana⁣
½ cup aloe vera gel⁣
½ avocado⁣
2 dates⁣
1 tbsp maple syrup⁣
1-2 scoops collagen⁣
1 cup cottage cheese⁣
Almond milk to blend⁣
⁣
(“MAKE IT PRETTY”)⁣
1-2 tbsp strawberry “glaze” (I used no sugar added jam)⁣
2-3 tbsp coconut creme ⁣
⁣⁣⁣
WHAT TO DO:⁣⁣⁣
1-Add all smoothie ingredients to the blender and blend for 1 minute on high - or until thick and fluffy.⁣
2-In a tall glass, spoon a dollop of strawberry glaze into the bottom then use the back of the spoon to smooth it up the sides. Repeat with the coconut creme.⁣
3-Pour smoothie and enjoy!⁣

HIGH PROTEIN AVO “TOAST” 🥑👀🍳

WHAT YOU NEED:
(SCRAMBLED EGGS) - amounts are veryyyy approximate
2-3 eggs
1-2 cups chopped spinach
1/4 cup shredded cheese
Butter or cooking spray
2 rice cakes

(MASHED AVO)
1/2 avocado
1/4-1/2 cup cottage cheese
Lime juice (optional)
Salt (optional)

WHAT TO DO:
1-Preheat a large skillet over medium heat. Add butter (or cooking spray) and chopped spinach. Stir and let cook for 3-4 minutes or until reduced in size. Sprinkle over shredded cheese and let sit till melted.
2-In a small bowl, whisk together eggs until light and fluffy. Pour over skillet and scramble eggs as you normally would. Turn off heat and set aside.
3-Mash avocado and cottage cheese together. Add a dash of lime juice and salt for flavour.
4-Spread avocado mash over rice cakes, then top with scrambled eggs and enjoy!
