Ryo Horiuch, representing Japan – Le Taittinger 54th Edition (2022)

Winner of the Japanese heat of the Taittinger Prize, Ryo Horiuchi speaks French, which is quite unusual. He learned the language during various stays in France while working in such renowned establishments as those of Thierry Marx or Régis Marcon, a former Taittinger Prize winner in 1989. He remains true to the French culinary spirit in working in Tokyo for Alain Ducasse, who created the Esterre restaurant’s menu at the Palace Hotel. In his young career, Ryo has held positions in France and Japan. This valuable experience has enhanced his personal style. His profound knowledge of French cuisine will enable him to devise an original dish orchestrating the Japanese culture infused with the Escoffier tradition. He is just the man to repeat the feat of Kenichiro Sekiya who won the Prize in 2018.
