Today is National Gin and Tonic Day so of course we're gonna release a video on the iconic highball. Truth be told I don't do enough highball drinks on this channel, they are wonderful and today we pay tribute to one of the most iconic.

Most have it that this drink was created in the early 19th Century by The British East India Company who were stationed in India where Malaria was a persistent problem. Quinine, which is an extract from Cinchona Bark was taken as an anti-malarial throughout the British colonies from about 1820 onward. Quinine's use against Malaria was discovered by Scottish Doctor George Cleghorn in the 1700's. As it is quite nasty to drink on it's own, English soldiers would add it to fortified wines and tonics spiked with Gin as a means of making it more palatable. According to William Grime's book "Straight Up or On The Rocks" It was the Canada Dry Company who is credited with popularizing the drink in America, after their tonic was served at the 1939 world's fair.

I am fully aware that there are many many bartenders out there who stand by their own recipe for tonic, I will at some point try my hand at it but I will say that thus far I have not been able to find any home made recipes that can claim to even approach the quality of commercially available ones. And I say that when considering companies making high quality tonics such as East Imperial and Fever Tree. I just trust a company whose whole function is to get this recipe right than ones made at home.
