This is the Dingle Samhain Single Malt Whiskey, and it's a hell of a way to mark the end of one chapter in a distillery's history!
Samhain is one of the key celtic fire festivals and marks the death of the sun god and the enter into the period of rebirth in the new year. As such it's a fitting way for Dingle to mark the start of the Dingle "Wheel of the Year" collection, which will be a series of whiskeys released over the coming two years to correspond with those Celtic Festivals. It is also appropriate as Dingle are now able to release some core whiskeys onto the market, where they had been forced to release limited edition batches in previous years.
This is a single malt whiskey which spent about five years in bourbon casks and then about two years being finished in moscatel casks (although if that's finishing, or a second aging, I'm not sure!). Moscatel is a sweet wine where the grapes are dried in the sun to concentrate the sugars, resulting in a densely fruity and syrupy liquid. This has had a huge impact on the whiskey, imparting some rich sweetness and dense red berry notes.
Dingle Samhain Single Malt Whiskey Tasting Notes:
Nose: Immediately, the characteristic "Dingle DNA" is apparent with an earthy, herbal note to the malt, but that is backed up with a rich, sweet, syrupy red berry note. This is accented with some lemon juice, cracked black pepper and a touch of heat from the ABV shining through.
Palate: Again, it leads with a nice malty influence, coupled with sweet caramel, clove and black pepper spice. This is followed with some buttery, biscuity notes, stewed red berries, and a touch of nuttiness, quite like a nice berry crumble.
Finish: A nice, long and spicy finish, but as you breath, the spice fades to a softer note, allowing the sweetness and berry notes to shine a little longer, showcasing the influence of the moscatel casks.
