Here's how to make a McDonald's-style Filet-O-Fish but 10x better.

Step 1: Prepare the Fish
Ingredients:
(3) Fish Filets
(2 cups) All-Purpose Flour
(1) Egg
(1 cup) Milk
(2 cups) Panko
(1 tbsp) Garlic Powder
(2 tbsp) Paprika
Hot Sauce
Salt & Pepper

To emulate the McDonald's filet-o-fish style, you want to use a thin piece of flaky fish, so I'm using whitefish. If you're using previously frozen fish (which most are), pat your filets dry with some paper towel and then sprinkle salt on both sides before letting them sit to draw out any extra moisture in the proteins.

Cut your filets into hamburger-sized pieces and set aside. Set up your drenching station with flour (seasoned with salt & pepper) in one, egg wash with a couple of dashes of hot sauce in another, and panko breadcrumbs in a third. Season your panko with a little salt, garlic powder, and some paprika for color.

Dip a filet first into the flour, followed by the egg wash, and finally the panko. Repeat this process until all of your fish filets are well-coated.

Step 2: Make the Sauce & Fry the Fish
Ingredients:
(2 cups) Mayo
(1 tbsp) Mustard
(1 tbsp) Chopped Dill Pickles
(1 tbsp) Capers & Sauce
(1 tbsp) Parsley
(1 tbsp) Hot Sauce
(1 tbsp) Worcestershire Sauce
(1 tbsp) Celery Salt
Pepper

Add mayo and mustard to a bowl. Finely dice some dill pickles and add those to the bowl as well, followed by some capers with a little of their juice, parsley, pepper, a couple of splashes of hot sauce, a small splash of Worcestershire sauce, and a sprinkle of celery salt. Mix well.

Pro tip: Whenever you make a sauce, let the flavors marry for a bit before serving. The flavors will be so much better if you do.

Heat a neutral oil to 350º and drop in your fish. Let these cook for 4-5 minutes, or until you see your fish start to float to the top of your fryer. Remove to a wire rack to cool, and immediately sprinkle with a little bit of celery salt.

Step 3: Assemble the Sandwich
Ingredients:
(3) Fried Fish Filets
(2) Brioche Buns
(3) Slices of American Cheese
Homemade Tartar Sauce

Add some tartar sauce to both sides of your brioche buns. Add a slice of American Cheese to each, a piece of fish, and finish with the other half of your bun.

Obviously, feel free to make this your own with different toppings of your choice, like lettuce or tomatoes. No matter what, just have fun with it.
