Ingredients for Marinating the Chicken:

- ½ cup yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 tablespoon cumin paste
- 1 tablespoon green and dry red chili paste
- 1-2 tablespoons lemon juice
- 2 tablespoons salt
- ½ tablespoon red chili powder
- 1 tablespoon coriander powder
- ½ tablespoon garam masala
- ½ tablespoon turmeric powder
- 1 small cup mustard oil
- 500 grams chicken

For Cooking the Chicken:

- 250 grams mustard oil
- 1 tablespoon cumin seeds
- 2 dry red chilies
- 2 medium-sized onions, finely chopped
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 teaspoons Kashmiri red chili powder
- 2 tomatoes, puréed
- 1 cup water
- Crushed kasuri methi (dried fenugreek leaves)
- Fresh coriander leaves (for garnish)

00:18 - Marinating the Chicken:
In a large mixing bowl, combine the yogurt, ginger paste, garlic paste, cumin paste, green and red chili paste, lemon juice, salt, red chili powder, coriander powder, garam masala, turmeric powder, and mustard oil. Mix everything well and coat the chicken pieces evenly. Cover the bowl and marinate the chicken for at least 1 hour (or overnight for best results!).

Heat mustard oil in a large wok over medium heat. Once hot, add the cumin seeds and dry red chilies, and let them sizzle. Add the chopped onions and sauté until they turn golden brown. Then, add salt, turmeric powder, coriander powder, red chili powder, garam masala, and Kashmiri red chili powder. Stir everything together to release those amazing flavors!
