This is our how to make rhubarb crumble with a crunchy top crumble. Rhubarb crumble is a great way to use up a glut of rhubarb and having an extra crunchy crumble top makes it a more special event.

I learnt how to make rhubarb crumble years ago. The recipe can be adjusted to make many different variations. As rhubarb is in abundance on the allotment it is easy to try little changes to the basic recipe.

Making a crunchy top crumble is a great way to finish many fruits ready for dessert. We have used different sugars at different temperatures to get the desired crunch. Sprinkling demerara sugar over before baking is an easy way to get a crunchy top crumble.

Recipe
For the rhubarb;
1 kg rhubarb
4 tbsp Honey
Juice from an orange
For the crumble;
100g butter
100g plain flour
100g demerara sugar
200g oats
4 cubes of crystallised ginger (optional)

4 tbsp of demerara sugar to sprinkle on the top

Set oven to gas mark 5 Chopped rhubarb, and put in an oven proof dish. Juice the orange and pour in with the honey and mix. Cook for about 30 minutes and stir half way through until the rhubarb is almost cooked.

In a food processor blitz the butter and flour to fine breadcrumbs. Mix in sugar, oats and crystalized ginger which I partly chopped first. Spoon over the fruit once cooked. You may have some spare crumble mix which you can freeze or refrigerate for another time. Sprinkle some demerara sugar over the top for extra crunch. Cook in the oven for about 20 minutes.
