🧂 Ingredients:

Large brinjal (eggplant) – 1 (around 400–500g)

Onion – 1 large (finely chopped)

Tomato – 1 large (finely chopped)

Garlic – 6–8 cloves (crushed or chopped)

Green chili – 1–2 (optional, chopped)

Ginger – 1 tsp (grated)

Cumin seeds – ½ tsp

Turmeric powder – ¼ tsp

Red chili powder – 1 tsp (adjust to taste)

Garam masala – ½ tsp

Coriander leaves – for garnish

Salt – to taste

Oil – 1.5 to 2 tbsp

🍳 Method:

1. Roast the Baingan:
Wash and pat dry the brinjal. Make small slits and insert a few garlic cloves inside. Roast directly on open flame (or in oven) until the skin is charred and inside is soft. Let it cool, then peel off the skin and mash well.


2. Prepare the Masala:
Heat oil in a pan. Add cumin seeds. Once they splutter, add chopped garlic, ginger, and green chili. Sauté for a few seconds.


3. Add Onions:
Add finely chopped onions and cook until golden brown.


4. Add Tomatoes & Spices:
Add chopped tomatoes, turmeric, red chili powder, and salt. Cook until oil separates and tomatoes are soft.


5. Add Mashed Baingan:
Now add the mashed eggplant. Mix well and cook for 5–7 minutes on medium heat.


6. Finish:
Add garam masala and chopped coriander. Mix and cook for 2 more minutes.


7. Serve:
Serve hot with roti, paratha, or steamed rice.

✅ Tips:

Always choose a large, lightweight brinjal – it usually has fewer seeds.

Roasting on open flame gives the best smoky flavor.

You can add a little smoked mustard oil for extra flavor.
