This is HOW I freeze my rice. First off, I never eat just white rice, it always has a minimum of quinoa and oatmeal mixed in. Sometimes I’ll add chia seeds but purple rice is one of my favorites!

When you cook rice the heat makes the starch molecules absorb water and swell which makes the rice soft and easy to digest. But when you cool and freeze the rice, starch molecules reorganize into a crystalline structure which turns into resistance starch.

Honestly, it’s kind of therapeutic to freeze and organize my blocks of rice into my freezer bag. Who needs instant microwave rice when you can get a hot bowl of rice in a little over a minute, straight out of your freezer, instead of your rice cooker?
