Sharing some of my family's FAVOURITE summer time dinner recipes in this video! These are designed to be simple, flavourful, healthy and free you up so that you can spend more time outside with your family.

GREEK BOWLS

My chicken Marinade: 2 tbsp olive oil, 1 tbsp lemon juice, tsp lemon + herb seasoning, tsp dried dill seasoning, salt + pepper. Let marinade for at least 30 mins. Hours or overnight is best!

Serve w/ basmati rice, kalamata olives, red onion, diced cucumber, quartered cherry tomatoes and pita bread.

SMASH BURGERS AND FRIES

My homemade burger patties: Season lean ground beef (1 or 2 lbs depending on how many burgers you're making) with 1 tsp garlic powder, 1 tsp onion powder, salt and pepper. Roll into 2-4 oz balls.

My homemade fries: I used yellow potatoes - you could use another type if it's what you have on hand. Cut long ways into wedges (leave a bit of skin on). Cook in approx 4 tbsp olive oil in frying pan until the sides get a bit crispy. Once they're looking golden (not fully cooked) - lay flat on a baking sheet and bake for another 20-30 mins at 400. Broil for 5 minutes before serving if you want them extra crispy.

My homemade dill dip: 1 cup sour cream, 1 tsp chopped fresh dill, 1 tsp lemon juice, 1 tsp garlic powder, season with flaky salt.

MANGO CHUTNEY TURKEY MEATBALLS

My homemade mango chutney meatballs: 1 lb lean ground turkey. 1 cup panko bread crumbs. 1 egg. 1 tsp of fresh minced garlic. 1 tbsp ginger paste. 1 tsp fish or soy sauce. 1 tbsp of mango chutney. 1/4 cup fresh basil. Salt + pepper. Scoop into 1 inch balls and bake for approx 20 mins at 400. Broil for another 5 minutes to give them a crust.

My homemade mango chutney curry: 1 tsp fresh ginger. 1 tsp minced garlic. 1 tbsp mango chutney. 1 tbsp of curry powder. 1 tsp garam masala. 400 ml full fat coconut milk. 1/2 tsp of salt. You may want to add more curry powder... you may want to add more mango chutney if you want it sweeter. Up to your taste! Add meatballs in and coat in the sauce.

Serve with basmati rice and sauteed pepers. Top with fresh basil leaves. Serve with naan for dipping.

COPYCAT BIRRIA TACOS AND MEXICAN STREET CORN

*NOTE - I modified this recipe to really minimize spice level for my kids. If you want to follow my version, omit the chiles recommended and instead add 1 tsp of chilli garlic sauce to your birria sauce blend. I also added another 1/2 cup of beef broth to compensate for the lack of liquid I had without those chillis! Instead of Oaxacan cheese, I used Cojita.

SOUTHWEST BOWLS

My chicken seasoning: 1 tbsp olive oil. 1 tsp garlic powder. 1 tsp onion powder. 1/4 tsp chilli powder. 1/2 to 1 tsp of tajin.

Top with black beans (rinsed + baked), corn, diced beefsteak tomato, avocado, sour cream, chipotle sauce and tajin seasoning.

Serve over rice, potatoes, quinoa, or couscous.
