Cottage cheese pancakes are that food that I want to make more often yet kinda slips my mind!
After a recent trip to Costco, where I purchased a 3 pack of cottage cheese, a memory tweaked of how awesome these pancakes are and I couldn't wait to make them.
Even if you don't like cottage cheese I encourage you to give this a try.

Basic recipe:
1 1/2 cups small curd cottage cheese with the liquid
4 eggs
2 Tbsp sugar
1 Tbsp baking powder
1 cup of flour
1/4 cup oil

Measure the cheese into a bowl and whisk eggs in one at a time. Add the oil and sugar beating those in to combine.
Add the flour and baking powder 1/2 at a time and only mix until combined. Over mixing the batter once the baking powder is in there could cause the pancakes to be tough or not rise.

Thinly coat a pan with oil and heat to medium temperature. Drop batter by 1/4 cup full into the preheated pan and flip the pancake when the bubbles have formed and popped.
Pancakes tend to burn if on too high of heat and the inside will be doughy. You will find that perfect temperature that works with your pan and stove as you cook.
