Palak Methi Egg Masala Recipe (पालक मेथी अंडा मसाला) | Methi Palak Anda Masala | Egg Spinach Curry
Palak Methi Egg Masala (पालक मेथी अंडा मसाला) is a hearty and flavorful curry where boiled eggs are simmered in a rich spinach, methi, and cashew-based gravy. The methi lends an earthy aroma and gives the curry a deeper tone instead of a bright green, but the taste is absolutely delicious. A little ghee added at the end enhances the flavor and adds a subtle gloss — it’s optional, but highly recommended. This comforting dish pairs beautifully with chapati, paratha, or jeera rice, making it a perfect choice for a wholesome meal.
Ingredients :
5 to 6 Eggs (hard-boiled, shelled)
8 to 10 (15 gms) Cashew Nuts
100 gms Spinach (Palak) - washed thoroughly, stems removed & drained
Blanching the Spinach (Palak) :
Sufficient Water for boiling
¼ tsp Salt
Other Ingredients :
2 to 3 tbsp Oil (use as per your diet restrictions)
½ tsp Cumin Seeds (jeera)
2 to 3 Dry Red Chillies (broken in halves)
1 large (150 gms) Onion - finely chopped
1 tbsp Ginger Garlic Paste (adrak-lehsun paste)
1 large (100 gms) Tomato - finely chopped
½ tsp Salt (or as per taste)
2 to 3 Green Chillies (whole, slit or chopped - use as per your spice preference)
½ tsp Turmeric Powder (haldi powder)
½ tsp Red Chilli Powder (use as per your spice tolerance)
1 tsp Coriander Powder (dhaniya powder)
40 gms Fresh Fenugreek Leaves (methi leaves) - washed thoroughly and chopped
100 to 150 ml Water (use as per the consistency you require)
¼ tsp Garam Masala Powder
½ tsp Dry Fenugreek Leaves (Kasuri Methi) - lightly roasted and handcrushed
1 tbsp Ghee (optional, but recommended)
Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
