Recipes :

Butter Garlic Mushroom
Preparation Time: 3-4 minutes
Cooking time: 5-6 minutes
Serves: 3-4

Ingredients:
200 g button mushrooms
2 tbsp butter
2 tbsp fresh parsley, chopped
1 tbsp garlic minced
1 tsp red chili flakes
Salt to taste

Method:
Half the button mushrooms. Heat the butter in a pan. add the chopped garlic and sauté till fragrant. Add the mushrooms and sauté on high heat till golden. Season with salt and red chili flakes. Add chopped parsley and toss well. Remove and serve hot.

Navratan Pulao
Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 3-4

Ingredients:
2 cups rice
1” cinnamon stick
2 bay leaves
2 black cardamoms
3-4 green cardamoms
¼ cup green peas
¼ cup almonds
¼ cup cashew nuts
¼ cup raisins
¼ cup cranberries
¼ cup pomegranate
100g paneer
½ cup carrots, diced
¼ cup beans
2 tbsp ghee

Method:
Wash the rice and soak in water for 10 minutes. Heat oil in a pan. add the dry fruits and saute for 2 minutes. Add the vegetables and saute for 3-4 minutes. Remove from heat.
Heat the ghee in a pan. add the whole spices and saute for 1 minute. Add the drained rice and saute for 2-3 minutes. Add double the water, salt to taste and cook till 75% done. Add the cooked vegetables and mix well. Cook for 2 minutes. Remove from heat and keep covered for 10 minutes. Fluff with a rice and serve.

Kaju Khoya Paneer
Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 3-4

Ingredients:
4 tomatoes
½ cup cashew nuts
½ cup khoya
250g paneer
1 tbsp kashmiri red chili powder
2 tbsp butter
¼ cup cream
1 tbsp kasuri methi
¼ tsp turmeric powder
½ tsp caraway seeds
3-4 green cardamoms
2” cinnamon
2 bay leaves

Method:
Grind together the tomatoes, ginger, green chili, kaju and khoya to a smooth paste.
Heat oil in a pan. add the whole spices and saute till fragrant. Add the red chili powder and mix. Add prepared paste, cover and cook for 5-6 minutes. Add the cubed paneer, salt and garam masala powder. Mix well and finish with cream and kasure methi. Serve.


Methi Makai Matar Malai
Preparation Time: 10 minutes
Cooking time: 15 minutes
Serves: 3-4

Ingredients:
1 cup corn
1 cup green peas
200ml cream
1 onion, chopped
2” ginger, chopped
2-3 green chilies, chopped
2 tbsp kasuri methi
½ tsp Turmeric powder
½ tsp Red chili powder
Salt to taste
2 tbsp oil
½ tsp cumin seeds

Method:
Heat the oil in a pan. Add the cumin seeds and allow to splutter. Add the chopped onions and saute for3-4 minutes till translucent. Add ginger 7 chilies and saute till golden, add the green peas and the corn, turmeric powder, salt and mix well. Cover and cook till the vegetables are cooked. Add the cream, red chili powder, kasuri methi and mix well. Add ¼ cup water and bring to a simmer. Cook for 2 minutes and remove from heat. Serve.

Rasgulla Chaat
Preparation time: 10 minutes
Ingredients:
6 white rasgulla
1 cup dahi
Sweet tamarind chutney
Green chutney
Sev
Chopped coriander
Pomegranate seeds
Chat masala

Method:
Lightly squeeze the rasgullas and place in the serving dish. Whisk the yoghurt with ½ cup rasgulla syrup and pour over the rasgullas. Top with the chutneys, sev, coriander, pomegranate seeds, sprinkle chaat masala and serve.
