Preparing "cheese" stack from Bramley apple pulp for pressing at our Rough Old Wife Cidery in Kent. Simon Reed and Andy Maclean are seen as the co-producers working on building up the stack. This should produce some 60-80 litres of collected juice once the stack is complete with 10 cheeses and pressed. This normally takes about 20 minutes in total. Pressures of up to 25 tonne per square inch are created by the bottom pressing hydraulic press.
