Fu Yung is a cantonese stir fried egg and tender shrimps. This recipe is simple and easy to make for lunch.

Ingredients:
60 g Bamboo shoots (diced)
60 g Mushroom (diced)
1 Garlic Clove
300 g Shrimps (shelled and deveined)
6 Eggs (room temperature)
1 TBSP White Wine or sherry
2 TBSP Spring Onion (Chopped)
2 TBSP Oil
Salt and pepper to taste

Note:
You can also cut the shrimps in smaller pieces.
You can also just flip the egg mixture and let cook on both sides (just like an omelette) instead of scramble (depends on your preference)
Substitute for bamboo shoot - grated carrot, shredded cabbage or bean sprout. If using bean sprout, blanch in hot water and rinse and drain. Thus the bean sprout will be crunchy.
