Ingredients
Black Channa (Black Chickpeas) – 1 cup (soaked overnight)
Ghee – 2 tablespoons
Onion – 1 medium, finely chopped
Tomato – 1 medium, finely chopped
Garlic – 4-5 cloves, minced
Ginger – 1-inch piece, minced
Green Chili – 1, chopped (optional for heat)
Cumin Seeds – 1 teaspoon
Coriander Powder – 1 teaspoon
Cumin Powder – 1 teaspoon
Garam Masala – 1/2 teaspoon
Red Chili Powder – 1/2 teaspoon
Turmeric Powder – 1/4 teaspoon
Salt – as per taste
Fresh Coriander Leaves – for garnish
Water – 2-3 cups
Instructions
Step 1: Prepare the Black Channa
Soak the Black Channa: Rinse and soak the black channa overnight (for at least 8 hours). This makes it tender and reduces cooking time.
Pressure Cook the Channa: Drain and rinse. Place the soaked channa in a pressure cooker with 2-3 cups of water and a pinch of salt. Cook for about 3-4 whistles on medium heat or until the channa is soft but still holds its shape. Set aside.
Step 2: Make the Masala
Heat Ghee: In a large pan, heat 2 tablespoons of ghee on medium flame.
Add Cumin Seeds: Add cumin seeds to the hot ghee, letting them sizzle until fragrant.
Sauté Aromatics: Add chopped onions and cook until golden brown. Add minced garlic, ginger, and green chili. Sauté for another 1-2 minutes.
Add Tomatoes: Mix in chopped tomatoes and cook until they soften and the oil begins to separate from the masala.
Add Spices: Lower the heat and add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Sauté for 1-2 minutes until the spices are well cooked.
Step 3: Combine and Simmer
Add Cooked Channa: Add the cooked channa (along with the cooking water) to the pan. Mix well with the masala.
Simmer: Let it cook for 10-15 minutes on low to medium heat. This helps the channa absorb the flavors of the spices and ghee.
Adjust Consistency: If you prefer a thicker consistency, mash a few channa pieces and let it simmer until desired thickness is achieved.
Step 4: Final Seasoning and Garnish
Add Garam Masala: Sprinkle garam masala and mix well.
Garnish: Turn off the heat, garnish with fresh coriander leaves, and a small drizzle of ghee for extra flavor.
