Making pickled onions is a great way to preserve onions or use up onions that are about to go bad. These are a delicious addition to salads, sandwiches, burgers, tacos, hotdogs or even on fancy appetizers. You've probably had them in your favorite restaurant at some point. Quick Refrigerator Pickled Red Onions

1.5 cups sliced red onion (any onion will do however)
2 cloves garlic
3 tbsp sugar
1 tbsp salt
1/2 tsp peppercorns (optional)
1 cup white vinegar

Instructions:
1- Thinly slice the red onion and peel the garlic. Place the onion and garlic into a glass jar.
2- Add the sugar, salt and peppercorns to a small sauce pan. Add the vinegar and stir until the sugar and salt are dissolved. Place a lid on the pan and bring to a boil over medium heat.
Stir occasionally.
3- When sugar is dissolved, allow to cool slightly, then pour the vinegar mixture over the onions and garlic. Place a lid onto the jar. Allow to cool to room temperature and store in the fridge for 24-48 hours before using. Onions can be stored in the refrigerator for 3-4 weeks.
