Resep Awug / Ombus-ombus Tapanuli (14 pcs)

Bahan:
200 gr tepung beras
250 gr kelapa parut
50 gr tepung ketan
50 ml air
1 sdt garam
½ sdt vanili bubuk
160 gr gula aren
Daun pisang
5 lembar daun pandan

Langkah:
1. Kukus tepung beras dengan satu lembar daun pandan selama 20-25 menit,
2. Setelah dingin, campurkan tepung beras dengan tepung ketan, aduk kemudian tambahkan kelapa parut, aduk rata
3. Campurkan air, garam dan vanili bubuk, aduk rata lalu masukkan ke dalam campuran tepung, aduk kembali
4. Siapkan daun pisang dan cetakan mangkuk berukuran kecil, gunting daun pisang seukuran mangkuk
5. Masukkan adonan tepung beras, gula aren lalu masukkan kembali adonan, padatkan kemudian pindahkan ke daun pisang
6. Panaskan kukusan, masukkan daun pandan ke dalam air kukusan, kukus selama 10 menit
7. Belah memanjang daun pisang, bentuk kerucut lalu masukkan adonan tepung ¾ penuh, isi dengan gula aren, masukkan kembali adonan tepung, padatkan, tutup kemudian sematkan tusuk gigi
8. Kukus selama 15 menit
9. Hidangan siap disajikan

Awug / Ombus-ombus Tapanuli Recipe (yield 14 pcs)

Ingredients:
200 g rice flour
250 g grated coconut
50 g glutinous rice flour
50 ml water
1 tsp salt
½ tsp vanilla powder
160 g palm sugar
Banana leaf
5 pc pandan leaf

Steps:
1. Steam the rice flour with a piece of pandan leaf for 20-25 minutes.
2. Once it cools, mix in the glutinous rice flour and stir. Then, add the grated coconut in and mix well.
3. Mix water, salt, and vanilla powder evenly, then add into the flour mix and stir.
4. Prepare the banana leaves and a small cup. Cut the leaves into the size of the cup.
5. Add the flour mix, then the palm sugar, and cover with the flour mix. Pack it in, then unmold onto the banana leaf.
6. Heat the steamer and add pandan leaves into the water. Steam the Awug for 10 minutes.
7. Tear the banana leaves lengthwise. Shape it into a cone, then add the flour mix until ¾ full, fill it with palm sugar, and cover with more flour mix. Pack it in, fold the leaf close, and secure with a toothpick.
8. Steam for 15 minutes.
9. The dish is ready to serve.
