Super easy and quick!
Saute 1/2 onion (diced) in some butter
Add a couple cloves of garlic (minced)
4 cups of broth (veg or chicken)
4 handfuls of fresh spinach
1/2 cup of heavy cream.
Season with salt and pepper and Enjoy!

If you'd like this soup a little on the thicker side, stir in about 1/4 cup of flour to the onions/garlic before adding the broth.
