Ham and Cheese Tortilla Wraps Recipe

Ingredients:
2 plain tortilla wraps
150g Comté cheese (or mozzarella, grated)
3 tablespoons mayonnaise (store-bought or homemade)
1 teaspoon wholegrain mustard
8 slices of ham
2 tomato, thinly sliced (optional)

Instructions:
Prepare the Mayo-Mustard Mix:
In a small bowl, mix 2 tablespoons of mayonnaise with 1 teaspoon of wholegrain mustard. Set aside the remaining tablespoon of mayo for later.

Assemble the Wraps:
Lay the tortillas flat and spread a thin, even layer of the mayo-mustard mix on one side of each wrap.
On half of the wrap, sprinkle a generous amount of grated cheese.
Add slices of tomato (if using) over the cheese.
Place 4 slices of ham on top, followed by a bit more grated cheese.
Fold the tortilla in half, covering the filling.

Toast the Wraps:
Preheat a non-stick pan over medium heat.
Lightly spread the remaining tablespoon of mayonnaise on the outside of each folded wrap (this will give a golden, crispy finish).
Place the wraps in the pan and cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese has melted.

Serve:
Remove from the pan, slice in half, and serve immediately.

Homemade Mayonnaise Recipe

Ingredients:
1 egg yolk
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar or lemon juice
150ml neutral flavour oil
Salt and pepper, to taste

Instructions:
Prepare the Ingredients:
In a medium bowl, whisk together the egg yolk, Dijon mustard, and vinegar or lemon juice until smooth.

Slowly Add the Oil:
While whisking continuously, very slowly drizzle in the oil. Start with just a few drops at a time until the mixture begins to thicken.
As the mayonnaise thickens, you can gradually add the oil in a thin, steady stream.

Whisk Until Thick:
Keep whisking and adding oil until you’ve used all of it, and the mixture becomes thick and creamy.

Season:
Once the mayonnaise is ready, season with salt and pepper to taste. If you prefer a tangier flavour, you can add a little more vinegar or lemon juice.

Store:
Transfer the mayonnaise to an airtight container and refrigerate. It should last for up to 3 days.
