Authentic Ukdiche Modak👇

Ingredients:

for stuffing

. 1 cup shredded fresh coconut

. 1 tsp poppy seeds

. 1 & 1/2 tbsp Gulkand

. 1 &1/2 tbsp rose syrup

. 1 & 1/2 tbsp powder sugar
(as per taste)

. 1 tsp classified butter(ghee)

. 1 tbsp pista slices

for Ukad (cover)

. 1 cup rice flour
(modak pithi)

. 1 cup water

. 1/2 tsp classified butter (ghee)

. 1/4 tsp salt

. 1 & 1/2 tbsp rose syrup

. oil

Method:

for stuffing

. Heat 1 tsp ghee in a pan.

. Add poppy seeds
and saute it for
few seconds on
low flame.

. Add fresh coconut and
saute it for 1 minute.

. Add gulkand,rose syrup,
powder sugar and
keep mixing on low flame
till sugar melted.

. when sugar melted,
saute this mixture for
2 - 3 minutes on
low flame till becomes
little dry.

. It should not more wet
nor too dry.

. Switch off flame and
add pista slices

. stuffing is ready,
transfer it in other bowl
and allow to cool at room
temperature.

for Ukad(cover)

. Heat 1 cup water in a thick
bottom pan.

. Add salt ,ghee and rose syrup.

. When water started boiling,
add rice flour and mix
it quickly.

. Cover it with lid and
allow to cook
for only 1/2 minute on
low flame.


. Transfer ukad in flat plate.

. Knead it properly with
bottom of glass till it is hot.

. Then knead it with palms
for 5 -7 minutes.

. Grease little oil while kneading
ukad. it gives nice smooth texture
to ukad.

. Now time to prepare modak.

. Grease little oil to palm
and take small portion of
ukad. (medium lemon size)

. Grease little oil to it.

. Prepare a bowl shape
with the help of fingers,
as shown in video.

. Then create folds at the edges
as shown in video.

. Fill 2 tsp stuffing and press it
gently.

. Take all edges together and
close it gently and give a modak
shape.

. Repair folds very gently
with the help
of curved ended
spoon.

. Prepare all modak in same way.

. Heat water in a pan.

. Place a strainer and aline
a cotton cloth/banana leaves
/turmeric leaves
or butter paper in it.

. Just deep each modak in
water and quickly
place it in strainer.
It will avoid to crack modak
while steaming.

. Cover modaks with lid
and allow to steam
it for 10 - 12 minutes
on medium - high flame.

. Pick steamed modak
with wet palms
as it is very hot,and
transfer it in a plate.

. Rose flavoured steamed
modak are ready .

. Enjoy hot by pouring
clarified butter
(ghee)
