ilkiest Chocolate Tart Recipe | Tarte au Chocolat
A triple layer of crumbly crust, a truffle-like interior, and an almost patent-leather-shiny glaze make this tart the chicest take on chocolate we've come across in a long time. A brilliant make-ahead dinner party dessert. We tried this recipe, this came out so delicious!
Ingredients :
For tart :
Unsalted butter - 70g
Powdered sugar - 40g
Almond powder - 30g
Salt - 1/4g
Cake Flour - 135g
1egg
Procedure:
1. Cream the butter with a whipper.
2. Add powdered sugar, almond powder, salt and mix well.
3. Add one egg and mix again.
4. Add Cake flour gradually and fold it with a spatula.
5. Wrap it with cling sheet while it is a bit powdery and let it set in the refrigerator for 4 hours.
6.Spread the dough, set it in mold and rest in refrigerator for 1 hour!
7. Put baking paper and add fill with dry beans, rice or pie weights.
8. Bake at 356F/160C for 40 minutes.
9. Take out dry beans, rice(as I didn't use pie weights) and let it cool.
Chocolate ganache filling :
Milk chocolate - 100g
Dark chocolate - 100g
Heavy Cream - 130ml
Unsalted butter - 25g
Procedure :
1. Boil heavy cream.
2. Pour into chopped chocolates and mix well till chocolates melt.
3. Add butter when temperature reduces.
4. Once the butter has melted, pour it into the tart.
5. Rest in refrigerator at least for 6 hours.
For glacage :
Sugar - 45g
Cocoa powder - 20g
Heavy cream - 35g
Water - 25g
Gelatin sheet - 5g
Procedure :
1. Take sugar and cocoa powder and keep aside.
2. Heat water and milk in a pan.
3. Pour hot solution into the sgar and cocoa powder mixture and mix well.
4. Add gelatin, strain it and let it cool.
5. Put the glacage on chocolate ganache filling and keep in regrigerator atleast for 8h.
Mold size 20cm
