Hi guys

This tutorial is for a delicious sandwich biscuit with a fruity jam centre aka Jammy Dodger. Below you'll find the simple sugar cookie recipe which uses icing sugar instead of granulated or caster sugar.

(For those of you know don't know, a real branded 'Jammie Dodger' is a vanilla shortbread biscuit with a raspberry jam centre. You can easily find them in British supermarkets but they might be harder to find abroad)

My version is easy to make and the dough can be made ahead and frozen - just defrost at room temperature for 2-4 hours.

Ingredients:
225g marg or butter
125g icing sugar
1 ½ tsp vanilla extract
2 tbsp milk
1 egg yolk
300g plain flour
150g jam

Method:
1. Mix the butter and sugar together until soft and incorporated.
2. Add the vanilla and yolk and mix well.
3. Add the flour and a little milk to make a dough. Add the milk one teaspoon at a time.
4. Roll out the dough between two pieces of parchment paper and wrap in cling film. Keep in the fridge for at least an hour before use.
5. Heat the oven to 170°C, gas mark 3.
6. Cut out your circles and place on a lined baking sheet. Using a small cutter, cut out a heart in the centre of half of the cookies. Save the scraps to make more cookies.
7. I recommend you place the unbaked cookies in the fridge for 10-20 minutes before baking if you have a warm kitchen (it's good practise even if you don't though).
8. Bake for 10-15 minutes then allow them to cool on a rack.
9. Warm 150g jam for a few second in the microwave, just until you can stir it easily (10-20 seconds)
10. Place a teaspoon of jam in the centre of each bottom cookie, then put a cut-out cookie on top and press lightly.
