Here's a simple recipe for making Egg Chow Mein:

Ingredients:
8 oz (225g) chow mein noodles or any thin egg noodles
2 tablespoons vegetable oil
2 eggs, lightly beaten
1 small onion, thinly sliced
1 small carrot, julienned
1/2 cup cabbage, thinly sliced
1/2 cup bell peppers, thinly sliced (any color)
2-3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon hoisin sauce (optional)
1/2 teaspoon sugar
Salt and pepper to taste
Green onions, chopped (for garnish)

Instructions:

1. *Cook the Noodles:*
Bring a large pot of water to a boil.
Cook the noodles according to the package instructions until they are al dente.
Drain the noodles and rinse them under cold water to stop the cooking process.
Toss the noodles with a little oil to prevent them from sticking together and set them aside.

2. *Prepare the Eggs:*
Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium heat.
Pour in the beaten eggs and cook until they are just set, stirring occasionally to scramble them.
Remove the scrambled eggs from the pan and set them aside.

3. *Stir-Fry the Vegetables:*
In the same pan, add the remaining 1 tablespoon of oil.
Add the sliced onions, garlic, and carrots. Stir-fry for about 2 minutes until they start to soften.
Add the cabbage and bell peppers. Continue stir-frying for another 2-3 minutes until the vegetables are tender but still crisp.

4. *Combine Everything:*
Add the cooked noodles to the pan with the vegetables.
Pour in the soy sauce, oyster sauce, hoisin sauce, and sugar. Toss everything together to coat the noodles evenly with the sauce.
Return the scrambled eggs to the pan and toss everything together.
Season with salt and pepper to taste.

5. *Serve:*
Garnish with chopped green onions.
Serve hot, straight from the pan.
