The key lies in the reverse creaming method, which coats each flour particle in fat to prevent gluten development. That and coldish butter help prevent your dough from becoming too sticky for a long time. This has quickly become my new favorite method for making cut-out cookies. And I think it will be yours, too, once you roll this dough out yourself!
