Recipe:
1st day - Poolish:

80g flour
80g water
1g fresh yeast

2nd day
Poolish mixed with:

Flour 460g (230g of 9% + 230g 0f 12%)
Salt 6g
Sugar 12g
Cinnamon powder 1 tsp
Fresh yeast 12g
Vegan butter 60g
Oat milk 242g

Cinnamon butter:

Vegan butter 60g
Light brown sugar 60g
Ground cinnamon 6g

Cinnamon Syrup:

(50% sugar + 50% water)
Sugar 100g
Water 100g

170C 10mins
