SÓC ĐÙM LÁ CHUỐI (SQUIRREL WRAPPED IN BANANA LEAF): Clean and chop the squirrel into small pieces and place in a bowl. Add bitter gourd, salt, MSG, coriander, chilly flakes and cooking oil and mix. Add a bit of water and wrap everything in banana leaf. Smoke for 15 minutes and serve.
DÊ NƯỚNG LỒ Ô (GOAT COOKED IN BAMBOO PIPE): Cut small pieces of goat meat and place in a bowl. Add salt, coriander, chillies, onion, garlic, cooking oil, water and lemongrass. Stuff everything in a bamboo pipe with the banana leaf and grill for 20 minutes.

3. MEAL IN AYUNPA
FRIED JUNE BUGS: De-wing the bugs and remove their legs. Prepare a hot pan. Add cooking oil, june bugs, salt and MSG. Stir-fry for 5 minutes.
GRILLED LIZARD: Clean the lizards and remove the intestines. Wash with water and grill on a charcoal stove for 30 minutes. Serve with freshwater mangrove and ant salt.
ANT SALT: Mix and mash ant eggs, ants, chilli peppers, MSG, ginger and salt. Serve.
