EPIC VEGAN SNICKERS ICE CREAM BARS🔥 Wholefoods & Low Calorie Density!!

If you have been craving a snickers ice cream bar but are trying to eat healthier and/or lose weight , I have you covered! AND these also happen to be made with veggies and beans of course 🤯

To make them weight loss friendly I made a base of banana and cauliflower ice cream, the caramel layer is made with low fat peanut butter powder and the (usually) high calorie crispy “peanuts” are actually made with chickpeas 🤯

It will totally satisfy that sweet tooth! Maybe make a double batch as they won’t last long ❤️

Ice cream layer:
1/2 a tin of chickpeas
1 cup of frozen cauliflower
3 ripe frozen bananas
4 medjool dates
1 tsp vanilla
1/3 cup plant milk
1/2 tsp white miso (or a pinch of salt)

Caramel layer:
6 medjool dates
3/4 cup peanut butter powder
1/2 - 3/4 cup water

Crispy topping:
1/2 tin chickpeas
Some melted dark vegan chocolate (optional)

1. Blend together all the ingredients for the ice cream layer until smooth and pop into a parchment lined tray.

2. Now soak those dates in boiling water for 10 mins to soften, then mash with a fork and add the peanut butter powder and water until is forms a nice sticky peanut caramel layer. Spread that onto the ice cream.

3. Air fry or oven your final 1/2 tin of chickpeas until crispy and add them on top of your caramel layer. Freeze overnight or for 6-8 hours at least.

4. Slice and drizzle some optional dark vegan chocolate on top 👌


VEGAN “CHEESY” DIP & 1 Ingredients Quinoa Tortilla Chips 🔥 Low Calorie & High Protein

If you are trying to build muscle and get lean then you have to try this absolutely delicious veggie packed dip that you can also use as a ricotta substitute in pasta etc.

AND if you are craving that crunch, pair it with my favourite 1 ingredients quinoa chips 👌

Ingredients
1 huge head of cauliflower
200g extra firm tofu
1/4 cup nutritional yeast
2 tbsp apple cider vinegar
1 tbsp onion powder
2 cloves of garlic
1/2 cup unsweetened plant milk
Sqlt to taste

Quinoa chips:
1/2 cup soaked quinoa
1/2 cup water

Plus veggies to serve!

1. Roast the cauliflower until slightly brown & crispy. Blend with remaining dip ingredients.

2. For the quinoa chips - soak quinoa and blend with water. Add 1/4 cup to a non stick pan and cook on both sides for 1-2 mins. Then chop into triangles and bake in the oven till golden brown (keep an eye on them as they can burn).

Serve with more veggies and you have yourself a satisfying weight loss feast!


Dump & Bake “BUTTER” CHICKPEAS & RICE 🔥 A fun twist on my vegan “Butter” tofu recipe in my Indian Cookbook (now 50% off!)

If you want a super easy & fool proof dinner for maximum weight loss (that will also feed your whole family) then put this in your rotation 👌

It is packed with veggies and starches which are the ultimate weight loss combo!

Ingredients
2 cup basmati rice
2 tins of chopped tomatoes
1 tin of chickpeas, with the chickpea water
1/2 tin coconut milk
4 cloves of garlic
1 thumb of ginger, grated
4 tbsp tomato purée
2 tbsp cumin powder
2 tbsp coriander powder
2 tbsp garam masala powder
1 tsp cinnamon
2 bay leaves
2 courgettes, grated
1/2 a white cabbage, grated
1 onion, diced
Salt as desired

Extras:
Vegan unsweetened yogurt
Coriander
Cherry tomatoes

1. Throw everything into an oven safe dish, cover with foil so it doesn’t burn and bake at 180 Celsius for 40 minutes. Garnish with yoghurt, coriander and cherry tomatoes.

And it’s that simple! Super delicious and fantastic for weight loss 😆
