✅ Spicy Creamy Mushroom Pasta
Ingredients:
250g pasta (penne or your choice)
½ white onion, finely chopped
3 garlic cloves, finely chopped
50g butter
150g oyster mushrooms (torn into large chunks)
150g chestnut mushrooms (finely chopped)
1 tbsp tomato paste
100ml rosé or white wine
½ tsp chilli flakes (adjust to taste)
½ tsp salt (plus more for pasta water)
¼ tsp freshly ground black pepper
300ml dairy cream
50g grated Parmesan (plus more for serving)
A handful of baby spinach
Pasta water (reserved)

Instructions:
1. Boil the Pasta:
Fill a pot with plenty of water, add ½ tsp salt, and bring to a boil.
Cook pasta until al dente (cooked until it is tender but still slightly firm to the bite, 1–2 minutes less than package time). Reserve some pasta water before draining.
2. Prep the Veggies:
Finely chop ½ white onion and 3 garlic cloves.
Tear oyster mushrooms into large pieces for texture.
Finely chop chestnut mushrooms to blend into the sauce.
3. Sauté the Base:
In a pan over medium heat, melt 50g butter.
Add chopped onion and garlic. Cook for about 5 minutes until translucent.
4. Cook the Mushrooms:
Increase heat slightly and add both types of mushrooms.
Sauté until mushrooms shrink and release moisture (~5–7 minutes).
Do not add salt yet – it will draw out too much water too quickly.
5. Add Flavour:
Stir in 1 tbsp tomato paste.
Pour in 100ml rosé or white wine to deglaze the pan. Let it simmer until the alcohol evaporates.
Season with ½ tsp salt, ¼ tsp black pepper, and ½ tsp chilli flakes.
6. Make It Creamy:
Add 300ml dairy cream and 50g grated Parmesan cheese.
Stir and bring to a gentle boil, then reduce heat to low.
7. Combine Pasta and Sauce:
Add cooked pasta to the sauce.
Stir and cook together for 2–3 minutes. Add reserved pasta water as needed to loosen the sauce.
8. Add Greens:
Stir in a handful of baby spinach. It will wilt quickly in the hot sauce.
9. Serve:
Plate your pasta and sprinkle extra Parmesan on top.
