Welcome to Wholesome Bites Our Today’s recipe is:
Chicken Enchiladas
Ingredients:
- 1 pound chicken breasts, cooked and shredded
- 1 can (10 ounces) red enchilada sauce
- 1and 1/2 cup shredded Mexican cheese blend
- 8 small flour tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: sour cream, diced tomatoes, sliced green onions, chopped cilantro

Instructions:
1. Preheat oven to 375°F (190°C).
2. In a large bowl, combine the shredded chicken, 1/2 cup cheese, chili powder, cumin, salt, and pepper.
3. Spoon the chicken mixture onto each tortilla, roll up, and place seam side down in a greased 9x13-inch baking dish.
4. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and starting to brown.
6. Serve with optional toppings as desired.
