Rajasthani Gatte Ka Pulao Recipe in Hindi | गट्टे का पुलाव | How To Make Gatta | Chef Ajay Chopra

Ingredients

Coriander seeds 1 tbsp
Saunf ½ tbsp
Ajwain 1 tsp
Jeera ½ tbsp
Chilli flakes 1 tsp
Black pepper powder ½ tsp
Besan 2 cups
Turmeric powder 1 tsp
Salt 2 tbsp
Red chilli powder ½ tsp
Ghee 4 tbsp
Curd ¼ cup
Oil for frying
Bayleaf 2 pcs
Cinnamon 2 inches
Black cardamom 2 pcs
Cloves 5-6 pcs
Black pepper 6-7 pcs
Garlic chopped 1 tbsp
Jeera ½ tbsp
Green chilli chopped 1 tbsp
Hing 1 tsp
Cashew nuts 7-8 pcs
Raisins 10-12 pcs
Onion chopped ½ cup
Turmeric powder ½ tsp
Red chilli powder 1 tsp
Green peas ¼ cup
Water as required
Basmati rice 1 cup

Take a motor pestle, add coriander seeds, ajwain, jeera, saunf, chilli flakes, black pepper powder and coarsely pound them. Keep them aside.
Take a bowl, add besan pounded masala, turmeric powder, salt, red chilli powder, ghee and rub them thoroughly.
Then add curd and knead it into a hard dough. Roll it to the cylindrical shape and cut even bite size pieces.
Heat a pan, add water, salt, ghee, curd and boil it.
Add the gatta to the boiling water, and cook them for 5 minutes. Once done, strain and remove them to a plate. Keep the remaining water aside for further use.
In a pan, heat oil and deep fry boiled gatte until golden brown.
Heat a pan, add ghee, bayleaf, cinnamon, cloves, black cardamom, black pepper and let them crackle.
Then add chopped garlic, jeera, pounded coarse masala and saute them.
Later add chopped green chilli, hing, cashew nuts, raisins and saute.
Add chopped onion and cook until it gets golden brown.
Then add fried gatta and saute them.
Add soaked rice, water and cook till the rice gets fully done.
Garnish gatte ka pulav it with coriander sprigs, green chilli juliennes and serve hot.
