Crab Omelette

Ingredients:
3 eggs
1/4 C Chopped Green Onion or Scallions
1/2 t Lime
1T Oyster Sauce
2t Soy Sauce
1t White Pepper

1/4 C Coconut Oil or Vegetable Oil
1/2 C Crab Meat

Crack eggs Into a small bowl, whip them together. Add chopped green onion, squeeze in a slice of lime, oyster sauce, soy sauce and pepper. Mix well.

Preheat the pan on medium heat, test if the oil is hot enough by way of dropping a bit of beaten egg in. If it fluff right up, you are good to go. If it turns brown too quickly, your oil is too hot. Add a bit more oil or turn down the heat.

When the oil is ready add the beaten eggs and push the edge from all sides gently to center. Move the pan to make sure it doesn’t stick to the bottom. Gently lifting it to free it from the bottom of the pan. When they are 75% cooked, add crab meat. If you use fresh shrimp, add it sooner.

Flip the egg over. Let it cooked on low for another 2 minutes. Flip it back and ready to serve. We serve our omelette over Jasmine rice with chili sauce.
