Ingredients:

கடலைப்பருப்பு / Bengal gram- 1 cup

துவரம்பருப்பு / Tuvar Dal / Pigeon lentil- 1/2 cup

உளுத்தம்பருப்பு / Split black lentil / Ulad Dal- 1/4 cup

உப்பு / Salt - to taste

இஞ்சி / Ginger- 1 inch sliced

பெருங்காயம் / Asafetida- 1/4 tsp

சிகப்பு மிளகாய் / Red chili- 5

கருவேப்பிலை / Curry leaves- little

எண்ணை / Oil - to fry vadas

கொத்தமல்லித்தழை / Coriander leaves- little

வெங்காயம்/ Onion- 1

Method:

Wash all dal thrice & soak in water for 2 hrs.

After 2 hrs drain the water from dal in a strainer before grinding for vada.
Take ginger, red chili, Asafetida, salt & curry leaves in mixer jar. Add all dal & grind it to a coarse batter. ( then only vadas will be crisp)

Add onion & coriander leaves& mix it nicely in the batter. (Instead of onion we can add cabbage or any vegetable of your choice with the batter & make vadas)Heat oil in kadhai.
Make small balls equally with the batter & keep it ready. When the oil is hot make small vadas by pressing in hand and fry in hot oil in medium flame.

Make all vadas & serve hot with tomato ketchup. These vadas are crispy outside & soft inside. Try this 3 Dal vada & enjoy!
