Basic Cocoa colouring for bonbons


I’ve tempered the coloured cocoa butter before applying to the mold.


Heat the cocoa butter colourant to 45 deg C
Then let it cool down to 28-29 deg C. Once cooled down to 28-29 deg C you’ll need to heat it back up to 31 deg C

Cotton make up pads used to pre clean the molds.

I used pre mixed colours by Roxy and Rich.

I let the molds set for 15 minutes in the fridge. Then left out at room temperature until I was ready to pour my tempered dark chocolate.
