1 tbsp red chili powder
1 tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder

1/2 cup chickpea flour (besan)

1/2 tsp baking powder (for extra puff)
1/2 tsp cumin powder
1/4 tsp garam masala powder

1/4 tsp red chili powder
Water (as needed)

Instructions:
Step 1: Marinate the Chicken
In a large bowl, add the chicken cubes.
Add the ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, salt, lemon juice, and yogurt.
Mix well to coat the chicken thoroughly and let it marinate for at least 30 minutes (you can also marinate it for a few hours for more flavor).
Step 2: Prepare the Batter
In another bowl, combine chickpea flour (besan), rice flour, cornflour, cumin powder, garam masala, salt, and red chili powder.
Slowly add water little by little to form a thick batter. The batter should be thick enough to coat the chicken without dripping off too easily.
Optionally, add some freshly chopped coriander to the batter for added flavor.
Step 3: Coat the Chicken
Take each marinated chicken piece and dip it into the batter, ensuring it’s fully coated with the thick batter.
Let excess batter drip off, but keep it lightly coated so it fries up crispy.
Step 4: Fry the Pakoras
Heat oil in a deep pan or wok over medium-high heat. Test the oil by dropping a small amount of batter; it should sizzle immediately and rise to the surface.
Carefully drop the coated chicken pieces into the hot oil. Don't overcrowd the pan—fry in batches if necessary.
Fry for about 5-6 minutes or until the chicken is cooked through and the pakoras are golden brown and crispy.
Use a slotted spoon to remove the pakoras and place them on a paper towel to drain excess oil.
Step 5: Serve
Serve the crispy chicken pakoras hot with chutney, such as mint chutney or tamarind sauce, and enjoy!
Tips:
For extra crunch: Adding a little bit of rice flour and cornflour to the batter helps make the pakoras extra crispy.
Add herbs for flavor: Finely chopped cilantro or mint leaves can be added to the batter for an herby twist.
Spicy version: You can add finely chopped green chilies or red chili powder for more heat.
