Mango Cheesecake


Cheesecake is a dessert made with a soft fresh cheese, eggs, and sugar. It may have a crust or base made from crushed cookies, graham crackers, pastry, or sometimes sponge cake. Cheesecake may be baked or unbaked, and is usually refrigerated which is made even more delicious by different toppings made from fruit.


Ingredients

Biscuits, crumbs - 200 grams
Melted butter - 100 grams
White sugar - 30 grams

Cream cheese - 500 grams
White sugar - 200 grams
Whole egg - 3 pieces
Heavy cream - 100 grams
Yogurt (mango flavored)- 150 grams
Vanilla - 5 grams
Lemon juice - 15 grams
Lemon rind - 5 grams
Flour - 30 grams
Salt - 2 grams, optional

For toppings :
Fresh mango
Whipping cream

Procedure :

1. Prepare the spring form 8 inches round pan with aluminum foil.
2. Process biscuits, melted butter and sugar.
Pulse the biscuits in a food processor or blender until finely ground.
3. Press the biscuits into the bottom of the
prepared spring form pan and chill for 30 minutes or until the biscuit is set.
4. In a mixing bowl with paddle attachment
cream the cream cheese and sugar in a medium speed until smooth, soft and creamy.
6. Add the eggs, one at a time, beating low speed for one minute after each addition then scrape all the sides.
7. Add the heavy cream slowly on low speed. Add the yogart, vanilla, lemon juice, lemon rind
beat until incorporated. Add the flour and beat until incorporated (Remember to scrape down the sides of the mixer bowl, and scrape up any thicker bits of cream cheese).
8. Pour over the prepared biscuits. Bake in a preheated oven with a temperature of 275 fahrenheit or 135 degrees celsius with hot water.
9. Bake for 1 hour or until no mixture sticks to a
toothpick when tested.
10. Cool down and chill first before top of whipping cream and design with fresh mango or your favorite fruit puree.
