Strawberry Cheesecake Eclair Dessert

2 pounds fresh strawberries
2 sleeves Graham Crackers
8 ounce package cream cheese, room temperature
14 ounce can Sweetened Condensed Milk
2 (3.4 ounce) packages cheesecake flavored instant pudding
3 cups milk
2 (8 ounce) containers Cool Whip

Slice strawberries and set aside.

Line a 9 x 13” dish with one layer of graham crackers. Set aside.

Combine the cream cheese and sweetened condensed milk in a large bowl and beat until smooth.

Add two boxes of pudding mix and milk. Continue beating for 4 to 5 minutes until mixture begins to thicken.

Fold in one container of Cool Whip.

Pour one half of the cream cheese mixture over the graham crackers.

Arrange a single layer of sliced strawberries over the cream cheese mixture.

Top the strawberries with another layer of graham crackers.

Gently spread the other half of the cream cheese mixture over the graham crackers.

Top with another layer of strawberries; then top with the other container of Cool Whip.

Cover and refrigerate for 6 to 8 hours before serving.
