How to fry masala shev -
• Put some ready dough into a shev maker.
• heat up oil for frying shev into a kadhai, once the oil is medium hot, keep the flame high & drop the shev into the hot oil,
• once you drop the shev, turn the flame to low, once the bubbles from the shev are getting less, flip the shev & fry for sometime take it out
• While frying next batch, turn the flame to high for 5-6 seconds, after 5-6 seconds, keep the flame high only, & drop the next batch
• Once you fry all the shev, allow it to comes at room temp, once shev comes at room temp, store into an airtight container

• Into a pressure cooker container take yellow moong daal, wash the dal well & add water
• Onto a clean white cotton cloth take wheat flour, tie a knot of the cloth to make potali
• Pour some water into a pressure cooker, put moong dal container into the pressure cooker, put one more container onto it & put wheat flour potali into the top container
• Cover the pressure cooker lid & take 3 whistles
• Once pressure cooker releases its pressure, open the lid take the daal & flour out
How to make knead chakali dough -
• strain the cooked moong dal using a strainer to get soft daal
• open the flour potali, break the flour & grind to fine powder & sieve the ground ata using a sifter to a parat
• Now to the wheat flour add cooked & strained moong dal, sesame seeds, carom seeds, turmeric, chilly pw, hing & salt mix everything well,
• initially knead the dough into cooked moong daal, dont add water immediately then if required use normal water to knead a tight dough, cover the dough & keep it aside
How to make chakali -
• once the dough is ready, start making chakali
• Take a portion from the ready chakali pith, knead them well, apply some water if dough is very stiff or dry
• we nee to have tight yet crackfree dough to make chakali
• Make a log out of it, put the dough into a chakli maker
• Make 5-6 chaklis
How to fry chakali -
• heat up oil into a kadhai for frying chakli, once the oil is med hot drop 3-4 chaklis into oil, keep the gas flame to med & flip the chakali after a minute
• then fry the chaklis on med flame until they get crispy
• take the chakalis out, follow the same process for the remaining chakli
