I have been growing Yacon in a cold climate now for I think five years, and the experiments included storing the nodules that grow new plants for the next year, as well as storing the root for food.

I have found out the nodules are best to be left together in a bunch, or as how they were dug, and covered in my aerobic compost, which holds just the right amount of moisture through-out the winter. All other methods most of the nodules dried up.

On the root side I now eat the stored roots in order of size, the smaller ones dry up quickly and are eaten first, the largest ones, as you will see in this video, it quite sweet and crispy yet all these months later from harvest.
