TOBAGO BOIL CORN RECIPE

TOBAGO BOIL CORN RECIPE
SERVINGS:5-8

INGREDIENTS:
5-8- Corn on the cob
2-3cups- Coconut milk (freshly squeezed preferably)
Salt to taste/11/2tbsp
Water- Enough to cover the corn in the pot
6sprigs- Fine thyme (3 for midway)
2tbsp- Broad leave thyme
3/4cup- Chadon beni (1/4cup for ending)
1/2cup- Chive
1medium- Onion
6cloves- Garlic
8- Pimento/seasoning pepper/flavor pepper(4 for midway)
1- Halabenero pepper
1tbsp- Goldenray/salt butter
1tbsp- Margarine/butter
1tsp Spicy cock(maggie)
2tsp- Allpurpose seasoning
2tsp- Black pepper
1-2tsp- The perfect seasoning (goya)


METHOD:

STEP1: Place the corn in the pot covering it with water,add the salt and herbs to the pot as well cooking until the corn softens.

STEP2: Allow the water to reduce to half its amount, then add the halabenero pepper, coconutmilk, 4-pimento, 3- sprigs thyme along the others spices and butter. Cook until the liquid reduces by half its amount.

STEP3: Add 1/4cup chadon beni to the pot, turn off the stove and serve.
